Do yourself a favor. Eat a crepe cake at least once in your life. If you're particularly worried about your weight, just have a slice. But really, if you're only going to have it once in your life, a whole cake won't hurt.
I made this cake for two reasons. Firstly, because it was my sister-in-law's birthday. Ellie turned 16 on Saturday and I love to make cakes for birthdays, even if the guest of honor is thousands of miles away in Oregon.
Secondly, because I wanted it.
Crepe cake is really quite easy to make. There are three main components. Crepes, pastry cream, and ganache. You just layer the crepes and pastry cream and top with ganache - easy peasy lemon squeasy!
